The dessert that brings smiles
INGREDIENTS:
• 500 g of fresh cow's cheese
• 3 eggs
• 60 g of sugar
• 350 g of flour
• Grated peel from a lemon
• 10 g of baking powder
• 1 pinch of baking soda
METHOD OF PREPARATION:
1. In a large bowl, mix the cheese with the eggs, sugar, lemon zest, baking powder and baking soda. Gradually add the flour and knead well until you get a homogeneous and slightly elastic dough.
2. Let the dough rest for 10 minutes, at room temperature.
3. Meanwhile, heat the sunflower oil in the enameled cast iron skillet – perfect for getting a crispy crust.
4. Form the papanasi on the marble plate : make balls from the dough and add a small "cap" to them (a small ring of separate dough).
5. Fry the papanas on medium heat, until they become golden and fluffy, then remove them on an absorbent napkin.
6. Serve them with heavy cream and your favorite jam - be it blueberry, cherry or raspberry!
The secret of the taste: Fried in the cast iron pan, the papanasi become crispy on the outside and incredibly soft on the inside. A traditional sweet, not to be missed!
