'Lancashire' stew
Ingredients:
- 500g diced lamb
- 300ml broth (preferably beef)
- 4 large onions
- 4 potatoes
- a few anchovies
- 2 cloves of garlic
- a few sprigs of green thyme
- a few sprigs of rosemary
- 3 bay leaves
- oil
- 100g butter
- salt and pepper
Preparation:
Heat the saucepan with a little oil.
Saute the meat pieces until they become brown and set aside.
In the same pot melt 50g of
butter with a little oil, so that it does not burn. Add 2 crushed garlic
cloves, a few finely chopped anchovies, julienne onions, bay leaves, sprigs of
thyme and rosemary, salt and pepper. Stir well until caramelized. Remove the
entire composition and set aside.
While the saucepan cools
down, cut the potatoes into thin slices.
Grease the pan with butter
and lay separate layers of potato slices, onion, meat and then repeat. Finish
off with a layer of potatoes, over which you can place pieces of butter.
Add broth and bake at 180
degrees C for one hour. Then remove the lid and continue for another 30
minutes. When the top becomes brown and the sauce is low enough, it's ready!
